Makes 3 pancakes

  • 90grams (maybe 1 cup) chickpea/ garbonzo bean flour

  • 1 cup egg whites

  • 1/3 cup unsweetened nut milk

  • 1.5 tsp baking powder

  • hint of stevia

Modified Corn Bread

Really was looking for healthier and low carb version of a corn bread....and this was born.

  • 76g Jiffy Cornbread mix

  • 2 tbsp Flax seed Meal

  • 2 tbsp Almond Meal

  • 60ml Unsweetened Vanilla Almond MIlk

  • 3tbsp Egg Whites

Cant remember if i added some water to this so if you find its too dry then add a little water at a time till you get pancake batter consistency. This really came out good and with the added almond and flax seed its a better alternative to the plain on Jiffy bread alone.  I used the same cooking time as listed on the Jiffy box. I also used a cast iron skillet to mold these special. Enjoy!

Pumpkin Kodiak Pancakes

I love Pancakes! Best way to make the most of your carbs for the day is to save them anyway you can. I'm a Macro hoarder and love a large dinner with dessert and all. So subbing some of the flour in my pancakes for canned Pumpkin is how I achieve that.

Ingredients:

  • 120g canned pumpkin purée

  • 40g Kodiak pancake mix

  • 3 Tbsp egg liquid egg whites

  • 2 packets of stevia.

Directions:  Mix all ingredients in a bowl until you get that nice medium thickness of pancake batter and spoon into a hot frying pan (you may need to add a little bit of water). Make sure they are nice and firm when you turn them over or they aren't ready to flip.

Flax seed and Almond Flour Bread

Ingredients:

  • 1/2 oz (2 tbsp.) Flax seed Flour

  • 1/2 oz (2 tbsp.) Almond Meal

  • 1 Egg

  • 40g Banana/ Yam

I like banana to sweeten this bread up but if you like a lighter sweetener use sweet potato or yams. Your gonna wanna mix all these ingredients together in a bowl and put it in a non-stick pan. Cook each side so that's its easy to flip over.
