Cauliflower Fried Rice (with a little white rice)

Yep i added that little bit of rice and it totally helps! Helps my sanity and yours if your counting your macros and don’t have a whole lot of carbs to spare.

  • 1/2c egg whites

  • 2 cup Cauliflower rice (200 grams)

  • 1/4 cup Cooked Celery (50 grams)

  • 1/4 cup Chopped green onions (30 grams)

  • 1/2 cup Peas and carrots (50 grams)

  • 2-3 tbsp soy sauce

  • 3/4 tbsp Olive Oil

I separate the cooked rice and celery in container and cook the rest in a skillet in batches of like 2-3 so i cook faster and its easy to separate in containers. I add the Olive Oil LAST! as it was extra virgin and it doesn’t tolerate heat very well. good way for me to get my unsaturated fats in. Another option here it to add some shrimp. This dish is a little low on the protein side cause i like to get my post workout shakes in nowadays.

Cauliflower Mac and Cheese

Yea so if you love mac and cheese but dont love all the carbs or just need to add a serving of veggies to your meal then you can include this with your potatoes or just have it without. This recipe is for strictly Cauliflower.

  • 2 cups Steamed Cauliflower

  • 1 tbsp 1/3 less fat Philadelphia cream cheese

  • 1.5 oz cheddar cheese (grated)

  • sea salt and pepper to taste

 Cut your cauliflower into large chunks and steam for 15-20 min. While still slightly hot add your cream cheese and grated cheddar cheese so it gets all gooey. Side of veggie mac is served! Season with sea salt and pepper.

Creamy Ranch Spaghetti Squash

I can't stress how delicious this is! There are 2 others versions of this recipe one will be found in the chicken page and the other in the salad page. This one in particular calls for:

  • 3 cups Spaghetti Squash

  • 50g grated carrots (or julienne)

  • 2 Tbsp 1/3 less fat Philadelphia Cream Cheese

  • 1-2 tbsp Hidden Valley Ranch Dip Powder

So the squash will already be cooked but if you need to know how to cook it peep my video 'Here'. Mix squash, cream cheese, ranch dip mix and grated or julienne carrots in bowl and serve chilled. Enjoy!
